The Little Jewel of New Orleans exclusively uses the traditional seasoned A.P. flour/corn meal/corn flour (aka “3-2-1”) batter on our fried seafood. While in recent years many establishments (even back home in New Orleans have elected to the single A.P. flour dredge, we favor a more traditional (if slightly more expensive) method. Our batters are seasoned and, in our opinion, moderately so. If a less spicy product is desired, simply ask to hold the hot sauce.
